Roasted Turkey, Cranberry, and Cheese Sandwich with Roasted Brussel Sprouts

Cranberry Chutney and homemade sourdough bread were made ahead


Roasted Turkey Legs

2 Turkey Legs

Vegetable Oil

Salt 

Pepper


-Preheat oven to 400°F with a rack in the middle position

-Grease the bottom of a dutch oven with butter

-Coat the turkey with oil and season with salt and pepper, add to dutch oven

-Cook the legs with the lid on for an hour and a half

-Remove the lid and allow the turkey to cook for another 30 minutes

-Check the temperature of the turkey in a thick spot before removing from oven

-Reserve drippings for brussels sprouts and keep oven on for them as well

-Cool before slicing


Sandwichs

Sliced Turkey Leg Meat

Savory Cranberry Chutney 

Sourdough Bread

Brie 

Gouda

Vegetable Oil or Butter

-Preheat griddle

-Cut cheeses into slices

-Butter the griddle and a slice of bread per sandwich, warm to lightly toast the bread

-Remove the bread from the griddle, add and pre heat vegetable oil to griddle

-Add cheese to the toasted side to start warming/melting it 

-Add bread with cheese to griddle and over with a pot lid to trap heat and melt melt cheese

-Press the turkey slices into the melted cheese to help hold it in place, add a generous amount of chutney on top of the turkey

-Top with the other slice of bread and flip to toast other side.


Roasted Brussels Sprouts

1lb of brussels sprouts

1 Lemon

Salt

Black Pepper

Pomegranate Seeds

-Cut off the ends of the brussels sprouts and cut in half

-Zest the lemon and cut in half and juice one half into the saved turkey leg drippings

-Add brussels sprouts, zest, salt, and pepper to the juice and dripping mixture and mix to coast the sprouts

-Spread brussels sprouts over baking sheet cut side down

-Bake for 30 minutes or till tender

-Separate the pomegranate's seeds 

-Sprinkle pomegranate seeds over the brussels sprouts



Final Notes:

-Needed a lot of chutney or else the brie was the most propionate flavor

-Roasting your own sandwich meat was SO much better than deli meat, it being juicy dark meat probably helped too

-Loved the brussels sprouts recipe, but will try pan frying shaved sprouts next time so that it's easier to eat with the seeds, more like a salad.

Dinner Dec 13, 2022 - Pumpkin Chili Dried beans soaked overnight and mixed gourd soup made (and served) a day ahead. Pumpkin Chili Half of left over mixed gourd soup ~1lb of bried beans that have been soaked in salt water overnight ~1lb of bone in goat meat, separated and meat roughly diced ~1lb of ground Italian sausage 1 Large Onion 3 Garlic Cloves 3 Bay Leaves Low Sodium Chicken Broth To Taste:    Salt    Black Pepper    Chili Powder    Red Pepper Flakes    Dried Oregano -Cook goat meat and sausage to a dutch oven until browned.
